Baking Banana Bread

It was time to try baking again, and after getting some cheap ripe bananas the other week before the price hike, Banana Bread was what we would attempt. It proved to be very easy to make, in 15 minutes the batter was in the oven. After baking for 1hr 15min, it was ready to taste… Success! It was very dense and moist, and was great to come home to after work for a slice or two.

Makes 1 loaf

  • 2 medium ripe bananas, mashed
  • 2 eggs
  • 1.75 cups bakers flour
  • 1.5 cups sugar
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1t baking soda
  • 1t vanilla extract
  • 1/2t salt
  1. Preheat oven to 160oC
  2. Butter a metal loaf pan (a 9x5x3inch pan was perfect for this recipe) then sprinkle with flour
  3. In a large bowl, whisk the bananas and eggs together
  4. Add all remaining ingredients and stir to blend well
  5. Taste the batter to confirm it tastes awesome
  6. Transfer the remaining batter to the pan and bake  for about 1hr 15min – until the bread is golden on top, has split and a metal skewer comes out clean from the centre
  7. Remove from the oven and let cool for 20 minutes in the pan
  8. Remove from the pan and let cool on a rack
  9. Serve warm (or cold)
  10. Enjoy!
